This knife features a notched blade to fulfill these conditions simply. The notch, or jaw, carved into the blade, simplifies sharpening as it prevents the edge from striking the whetstone, thereby maintaining sharpness. Safety is enhanced by ensuring the blade doesn't surpass the handle’s width, with the notch demarcating the transition between blade and handle. When the knife is placed on a rest or plate edge, the notch ensures it does so with both functional intelligence and aesthetic grace.
