The Upper Crust explores the original states of food and the often-complex processes involved in turning those ingredients into the traditional dishes familiar to all. Drawing on the traditional preparation methods for Taiwanese dishes, this series of wall hangings, booklets and plates help people understand the process involved in transforming various ingredients into traditional dishes. Take, for example, the oysters used in oyster vermicelli: setting up the oyster racks, tying the oyster strings and so on: only after each stage has been carefully completed, does the final dish emerge.
