We determined the order of frequency that dishes were used at mealtimes, noted that the main dish used in the Japanese home was the "rice bowl" and established those dishes used on a daily basis – bowls, plates and larger bowls. Porcelain does not absorb water, is hard and resistant to ultra-violet rays and chemicals, and neither emits toxic substances nor admits them to permeate it. The clear glossy glaze protects the pottery and its smoothness makes it difficult for dirt to adhere, making for easy washing. The white color is one highly suitable for dishes, and makes spotting dirt easy. Porcelain has been the most desirable material for dishes in Japan for 400 years, and is highly trusted.
